Leftovers
I have to admit a certain dislike to ‘normal’ breakfast choices. I often find myself eating normal lunch / dinner type meals for breakfast.
I also often find myself eating leftovers for breakfast. Such as today.
A few days ago I cooked a big load of pasta, wholewheat, with some salmon, some red peppers, some pepperoni, and a jar of (Lloyd Grossman) tomato and mascarpone sauce. A real caloryfest. I think the batch I cooked must have been well over 1000 calories. I ate about 2/3rds and put the rest in a container in the fridge.
I’m hungry, I thought, this morning. And this is what came out of the fridge…

Gosh, how unappetising does that look? But that’s the confessional nature of leftovers, they rarely look good, but they invariably taste delicious.
Especially pizza.

Yum. I feel the same way about breakfasts. It’s as if there’s a rule that breakfast means cereal, toast, eggs, whatever, whereas a late breakfast is often a cheese sandwich.
I haven’t had a take-out pizza since I started this. I always order the same pizza: 14″ on thin crust, tomato and cheese and pineapple and black olive. I then have 3-4 slices that day – with a leaf salad – and then 1-2 slices portions afterwards, sometimes cold with a splash of jalapeno tabasco. Although I am finding that big companies are putting nutritional information online, I doubt our local village pizza will.
With regard to your pasta – it looks great and I suggest you replace the shop sauce with your own. I went through a period of cooking up large batches of tomato sauce for pasta and then freezing it in bags in individual portion quantities. You don’t need to use any oil, and I add a little balsamic and mushroom ketchup (a thin liquid like Worcestershire sauce) for flavour.
Oh, and consider a spinkle of soya ‘bacon bits’ in place of the pepperoni. It’s low in fat and does (to this vegetarian) taste like bacon. Picture at http://ecx.images-amazon.com/images/I/5183TZRF7TL._SS500_.jpg – available at the supermarket.
Otherwise, if you want meat, I wonder whether cured back bacon – with most of the remaining fat removed – is healthier than pepperoni.

I agree, I could have made it a whole lot healthier. The sauce is indulgent, the pepperoni was an accidental purchase. I didn’t consider the contents of this meal at all, I just put it together.
This blog is useful as it actually makes you think about what you are consuming, and thinktion is the first step to action.
