9:45pm Beetroot and baked veg salad

Cooked beetroot, baked parsnips and potatoes, dill pickle, capers, grated cheese and a dressing of vinegar, oil and yoghurt.

For a 350g portion (eaten with a teaspoon, please note):

  • 326 calories
  • 18.3g protein
  • 35.5g carbohydrates
  • 13.3g fat
  • 5.4g fibre

I baked parsnips and potatoes on a lighted-greased tray.

I was out of lemons for the dressing and used balsamic instead. Lemon would have been nicer. Nice salad but it needed a bit of crunch – maybe some onion or seeds.

Day 14: Snack and Lunch

Up late again and a late lunch.

5pm Sweet potatoes with soft cheese and salad + apple + fizzy squash

I then had an orange TicTac (from Chris!) to get rid of the onion flavour!

There’s a lot of soft cheese there because there was a little left in the tub and I thought “best use it up now because it’s been in the fridge for a week and it won’t much longer.”

A lot of food gets eaten because I just ‘use things up’. It seems that, given a choice of throwing away a few pennies of food or getting fat, I’d rather keep my pennies. :-( I do try to buy smaller quantities where available, even if it’s more expensive.

However, I have noticed that since I started this food diary, my fridge certainly empties noticeably slower.

Mushroom cup-soup:

2am Two cheese rice cakes + pint of fizzy squash

The rice cakes are 38 calories each.
