May Fair

I went to the Richmond May Fair today with my daughter and her boyfriend. It was packed with stalls from local schools, churches and groups such as the Scouts and Sea Cadets, selling cakes and barbecued food to raise money. Instead, I popped into Tesco and bought one of their low-calorie sandwiches and a diet drink. We had an enjoyable day in the warm weather.

Wanting to avoid all those stalls, I didn’t do much walking around there today, though I did get to walk to St Margarets to pick up my car, so I racked up just over 8000 steps on the pedometer.

This very simple salad is one of my favourites and can be made in a few minutes. It is a bowl of wonderful contrasts in flavour. Serve with toast for a contrast of textures too.

Makes two main 286g portions or four side portions.

Per 286g portion:

  • 242 calories
  • 16g protein
  • 18g carbohydrates
  • 11g fat
  • 3g fibre

Ingredients
280g cooked beetroot
100g light mozzarella
30g capers (optional)
80g fat-free yoghurt
juice from one lemon
1 tablespoon (15ml) extra virgin olive oil

1. Cube the beetroot and mozzarella into a bowl. Add the capers, lemon juice, olive oil and yoghurt. Season with pepper. Only add salt if you’re not using capers.

2. Stir and it’s ready to eat!

On the upside, I managed 10200 steps on the pedometer, but some of those might just have been a few bumps on the ride home in Paola and Frank’s car!

On the downside, I knew today wouldn’t be a good day. I had intended to stack up on lunch on the basis that I was meeting Paola and Frank in Starbucks for a quick bite to eat before going onto a concert, and I’ve never seen anything in Starbucks that I like. However, while waiting for them, I browsed their selection and found something that actually looked rather tasty. So I ended up having a sandwich there and just went for it and had what I thought would be a low calorie muffin (since it said it was ’skinny’). However, Paola pointed out that it just meant low fat, but still high in carbohydrate calories and checking this morning, she was right.

Paola kindly took the time to look over my figures for the last month or so to see what proportion of my intake is on desserts and it was a 6th, but on some ‘bad’ days, it was up to a half! Not only that, but the proportion of my dessert intake has shown a trend of gradually increasing. It was sobering to see it all there in the charts she’d created and has made me really think hard about my eating habits.

I’m going to try a week, starting from today, without any desserts at all and see how I go.

Thanks, Paola, for caring enough to take the time to do that for me — I really appreciate it! :-)
