Another test today!

Hmmm… slightly over my limit. I should have had fewer nuts, or maybe only one scambled egg for brekkies — I’ll adjust tomorrow.

It was a staff birthday today — this means cake. And today… wow… his boss had bought the most amazing selection of luxury cakes. I would imagine he got them in Harrods, which is just up the road. They were amongst the most fabulous-looking (and I gather tasting) cakes I’ve ever seen! I wanted them all! I would have been happy with one! But no! It’s low carb week, so I had to go completely without. I consoled myself with the fact that as time goes on, my tolerance for sweet things is diminishing and I probably wouldn’t have enjoyed them anyway (not even the sweet little lemon curd tart). *sigh*

Meanwhile, my foot is really annoying me. It’s bad enough that my left foot was giving me jip but it was nothing to the constant pain I’ve been in with my right foot this past week and all the while, we’ve had the most amazing weather and I’ve really wanted to walk. I’m frustrated I’m unable to do any walking which is the only exercise I enjoy (I can’t swim). I’m seeing a chiropodist/podiatrist tomorrow and hope she may be able to figure out what’s going on.

Pork Soup

I made a big batch of this and split it into portions. The plan is to add it to other stuff (noodles, egg) to give it more bulk and a bit of variety. This way it can work as a starter or a main course.

I fried up the onion, garlic and meat, then added all the veg and boiling water. It wasn’t very spicy so I put in a teaspoon of chile flakes. In the bowl I had tonight I added Udon noodles and a squirt of lime.

150g chopped onion 50
4 cloves fresh garlic 18
porkloin, minced 200
4 small mushrooms 10
50g chard 10
120g red cabbage 37
70g green pepper (bell) 14
Pickled Jalapeno 6
45g asparagus 11
25g carrot 10
Chicken stock cube 40
1 tablespoon oil 119
5g shiitake 15
