Lunch
Salad: beetroot, carrot, sugarsnap peas, peas, pickled peppers, capers, sultanas, cucumber, red onion, red pepper, light mozzarella, lemon juice, extra virgin olive oil, half-fat cheese, low-fat yoghurt, dehydrated tofu + 3 x toast with fake butter

(Large portion of salad as it was the last of the batch. And three toasts as it was the last of the loaf. Ahem.)

Dinner
Bean stew: passatta, light coconut milk, Quorn chicken pieces, dehydrated tofu, soya beans, red chilli, red onions, red pepper, green beans, peas, garlic, tomatoes, dehydrated tofu with flour dumplings + served with extra virgin olive oil and low-fat yoghurt

+ 3 plums, orange
