Stew: passatta, light coconut milk, red onion, red pepper, garlic, carrot, mangetout, sweetcorn, lentils, walnuts, flour dumplings with low-fat yoghurt, dried tofu + lettuce, cucumber, lemon juice

  1. It’s actually seasoned tofu that’s been in the dehydrator for a couple of hours. I had been looking for a low-calorie vegetarian protein source as an atternative to beans and cheese.

    Soft tofu is so bland and squidgy. Semi-drying it gives it a chewy bite. When it’s just out of the dehydrator, any thin bits go crunchy. But they go chewy once they cool down.

    I’m adding this tofu to both my cold salad and hot stew-things. It’s also nice to snack on but I tend to go through any spare bits in a day or two.

  2. No wonder I have never seen dried tofu before. Its a brilliant idea.
    Try buying firm tofu, it is really nice to use in dishes.

  3. I didn’t know that. Here Tofu generally is quite reasonably priced and easy to get. I think we have a huge variety of flavoured and plain tofu available. Solution: Come to Canada !!
